Yummy Chicken Enchiladas

Welcome back!
I got in the cooking mood this afternoon and I had been craving this recipe so I thought I’d share a post with you about it. This is a yummy chicken enchilada recipe. It can be actually put together two different ways. Here are the ingredients needed first:
6 boneless skinless chicken breasts (easier than the bone in kind to me)
1- 8oz. sour cream
1 can cream of chicken soup
1 can Rotel tomatoes
1 package soft tortillas
2 cups Mexican Shredded cheese
Boil and shred the chicken. Then mix sour cream, chicken soup, and Rotel tomatoes and half of cheese together in a large bowl. Then, you can either take the individual tortillas and fill each with mixture, roll them up and line them up in a baking dish or you can tear up the tortillas, and line the bottom of a baking dish, pour chicken mixture on top and then tear up more for the top, and top with cheese. Either way you will top with cheese. The 2nd option makes more of a casserolle while the first is traditional individual chicken enchiladas. The choice is yours, it tastes the same regardless.
