Crockpot Cooking

Welcome back!
One night this week, I tried my hand at some crockpot cooking. I wanted to cook a roast, then shred it for sandwiches. I was chatting with the ladies of Mom’s Morning Show that morning , who had Sandra Jenson of Family Foodies and she and Cara Mirabella of The Household Helper were giving us all some great crockpot cooking tips. Cara even sent me a recipe from her new ebook,
She did say I could share it with you, so here it is:
BARBECUE PORK (Or BEEF) ROAST
1 pork roast (or beef)
Juice of 1 lemon
1 small onion, cut up
1 tsp sugar
1 bottle barbecue sauce
Cook roast covered in water (start with hot water) in crock pot
overnight on low 10-
12 hours. Pour off water and pull meat into shredded pieces. Sauté
onion in a little butter. Combine barbecue sauce, onions, sugar and
juice of lemon with meat in crock pot and cook on high for 1 1/2 to 2
1/2 hours, or on low for 3 to 6 hours.
Unfortunately I did not have every ingredient so I had to substitute a bit. But, Sandra encouraged us to use what we had in our fridge’s and pantry’s so that is what I did. The results were mouth watering and I was sooo proud of my efforts.

Crockpots rock!! I love cooking with mine. There is a weekly meme call Slowcooker Thursday that the In The Kitchen gals participate in and I get some awesome recipes on there. This looks delicious, I will have to give it a try:)
